Story: Our third Guatemalan release of the 2019 harvest is called Ixban, and it tastes crazy fruity, like freeze dried peaches pureed into a powder and sprinkled over a bowl of tropical fruit salad. Named after a small municipality found north in Huehuetanango, this is a collection of small day lots from small farmers who band together to produce enough coffee to create this 15-bag microlot. We particularly like the complexity that comes from multiple producers, growing multiple varietals at high elevation. Peach sweetness, heavy florals, lime acidity to balance the sugar, and a grapey finish. This is a vibrant gem of a coffee. Enjoy it!
