 San Vicente is known for procuring and processing some of the best Honduran coffees available, and we have been thrilled to have the opportunity to get ahold of these delicious coffees.

Our Honduran season keeps rolling with newcomer to the lineup Edi's coffee. This is 0.25 Hectare lot, perhaps a record size. Edi worked with her father from a young age, helping him harvest and dry coffee beans. She comes from a coffee-growing family that, at the time, produced conventional coffee.

She also learned vegetable production from her father. In 2003, Eddy moved away from El Cedral in search of work and spent a year working in the city before returning to her hometown. Upon her return, she began helping her husband with farm work and household responsibilities.

In 2019, thanks to her savings, Eddy was able to purchase a plot of land where she planted coffee with the goal of producing specialty coffee. A few years later, she began harvesting high-quality coffee and hopes to continue doing so for many years to come.

The cherries are de-pulped every afternoon, then, the parchment is put into fermentation tanks where it is dry fermented for 24 hours. After, the parchment is rinsed into the tank with a lot of water four times. Next, it´s put inside the parabolic solar dryer for around 20 days, during the dryer the parchment is sorted by hand to remove defective beans.
